FWIW, all houses around here have TYVEK or equivalent breathable membrane wrapping the sheathing. I mean ALL of them. There might even be a code on that now.
I have 'no idea' how tyvek would work...

I can't make knowledable comments about yurts larger than my primitive 16'er, or yurt clusters, since I have been in neither, nor know anyone who has such. Hopefully someone on here will help you...

Based on my experience you'll need a massive wood stove to heat a 32' yurt. Look only at the biggest model a manufacturer offers. Plus, the more mass the stove has, the better.

Moisture is being trapped inside your yurt by the insulation and covering material. Open the windows and open the roof vent. Roll up the side cover, and get a draft going.
